Corn Muffins
1/3 Cup of Shortening
1/3 Cup of Sugar
1 Beaten Egg
1 1/4 Cup of Milk
1 cup sifted flour
4 tsp. baking powder
1/2 tsp of salt
1 cup of Haven Brand Corn Meal
Cream shortening and sugar; add egg and milk.
Add flour, sifted with baking powder and salt.
Add corn meal, sitring only enough to mix and moisten. Fill muffin pans 2/3 full.
Bake in 400 degree oven for 20-22 minutes.
Southern Style Grits
1/2 stick salted butter
1 cup of Haven Brand Grits
4 cups of water
Bring 4 cups of water to a boil.
Slowly add in grits and return to a boil.
Add butter and reduce to a simmer.
Cover and simmer for 12-13 minutes or to your desired thickness. Stirring occasionally.
Add salt and pepper to your liking. Enjoy!
Fluffy Cornmeal Pancakes
1 cup of Haven Brand Cornmeal (5 ounces cornmeal; 142 grams)
1 cup all-purpose flour (4 ½ ounces; 127 grams)
3 tablespoons granulated sugar (1 ⅓ ounces 38 grams)
1 tablespoon baking powder
½ teaspoon salt
2 large eggs (out of shell: about 4 ounces; 113 grams)
1 1/4 - 1 1/2 cup milk
¼ cup vegetable oil
Nonstick cooking spray or unsalted butter for greasing the griddle
Optional Add-ins: Blueberries, chocolate chips, etc
Make the Batter: Whisk cornmeal, flour, granulated sugar, baking powder, and salt together in a medium mixing bowl. Mix the eggs, milk, and vegetable oil in a separate bowl. Add wet ingredients to your dry ingredients, and whisk until smooth.
Heat the Griddle: Lightly oil a nonstick griddle. Heat griddle over medium-high heat.
Cook the Pancakes: Pour batter, approximately ¼ cup, onto griddle. Batter should sizzle when it hits the pan. Cook for approximately 3 minutes. Flip pancakes when bubbles appear all over the surface of the pancake and begin to pop. The pancake should begin to look almost dry. Flip and cook another 1 to 1 ½ minutes.
Serve: Serve with butter and syrup, if desired. Enjoy!
Corn Bread
1 cup of sifted flour
1/4 cup of sugar
4 tsp. baking powder
3/4 tsp of salt
1 cup of Haven Brand Corn Meal
2 Eggs
1 cup of Milk
1/4 cup of shortening
Preheat oven to 425 degrees.
Sift flour with sugar, baking powder, and salt; stir in corn meal.
Add eggs, milk and shortening.
Beat with beater till just smooth.
Pour into 9x9x2 pan.
Bake in hot oven (425 degrees) about 25 minutes.
Kari’s Grits
1/2 stick salted butter
1 cup of Haven Brand Grits
4 cups of water (or milk for creamier grits)
1 1/2 cup of cheddar cheese
Bring 4 cups of water/milk to a boil. Be careful if using milk to avoid boiling over.
Slowly add in grits and return to a boil.
Add butter and reduce to a simmer.
Cover and simmer for 12-13 minutes. Stirring occasionally.
Add cheese.
Add salt and pepper to your liking. Enjoy!
